Kai (Wailea) — sushi and Japanese in a minimalist space with views. Monkeypod Kitchen (Wailea) — farm-to-table Hawaiian, good cocktails, less stuffy than other upscale spots. Pulehu (Wailea) — elevated Italian in the Four Seasons, wood-fired everything, view of the West Maui Mountains at sunset. Alalani at the Fairmont — seafood-focused, indoor-outdoor seating, quiet compared to the beach bars.
